Mind blowing Greek Meatballs

Prep Time: 15 minutes Cook Time: 45–60 minutes Makes: About 3–4 medium jars


Ingredients:
  • 500g mince
  • Handful of parsley
  • 250g Fetta
  • 2 cloves of garlic

Method:
  1. Pre heat oven to 180 and line a baking tray
  2. In a blender place all ingredients. Pulse to mix then roll into 8 balls with a diameter of 4-5 cms and place on baking tray.
  3. Add everything in: Add grated beetroot, apples, vinegar, sugar, salt, and all the spices. Stir well to combine.
  4. Arrange a selection of vegetables between and around the meatballs. I used carrot, broccoli, cauliflower and sliced zucchini.
  5. Drizzle with oil and sprinkle with salt and dried herbs. Bake for 25 minutes (180 degrees) turning halfway through cooking or until golden and cooked through.
